What is Soudabushi?
In contrust to Katsuobushi that made by Skipjack tuna, Soudabushi is made by Bulletmackerel.
In Japan we call skipjacktuna Honkatsuo. On the other hand we call Bulletmackerel Soudakatsuo.
It has been said since long time ago that "Katsuobushi has savory smell more than Soudabushi.However Soudabushi has umami more than Katsuobushi."
As a result of investigating the ingredients of Sodabushi actually made with "Soudakatsuo", "Taurine" which is also known as a umami ingredient amino acid was included about 3 times the Honkatshuo.
"Soudakatsuo" used for Soudabushi is a fish that freshness tends to fall and is not suitable for raw eating, but when it becomes Soudabushi, it becomes a food that produces distinctive taste and scent.
