What is Soudabushi?
"Souda bushi" is one type of bonito flake made from "souda bonito".
"Soudakatsuo" used for Soudabushi is a fish that freshness tends to fall and is not suitable for raw eating, but when it becomes Soudabushi, it becomes a food that produces strong distinctive taste and scent.
Although that name is unfamiliar with it much, but strong soup stock can be taken thicker than normal bonito flake,It is always used for soup stock such as udon and soba.
Also, it is also attractive to have a high nutritional value such as taurine compared to normal bonito flake.
In the old days "Souda bushi" rarely go on the general market, and it was circulating mainly for the purpose of professional chefs such as restaurants.
